Brisket Magic

Okay, I busted into the brisket that was included in the BBQ gift that my Texas reader sent me. I am not exaggerating when I say it was the best brisket I've ever had. I didn't put any of their vinegar-based sauce on it. Instead, I put slices of it on a kaiser roll with a horseradish mayonnaise and it was spectacular. This would really make a great signature sandwich for a restaurant/bar. It was melt-in-your-mouth good. It's incredible that you can put this piece of leathery meat in a smoker for 12-18 hours, pack it on ice and send it 1500 miles away and it's still so delicious that you can hardly stand it.

I figured since I have readers who obviously enjoy showing their appreciation for what I do, I might as well make it easy to do. I can't tell you how much I've appreciated the gifts I've received from readers, even more so because they were from readers who don't even leave comments, so I didn't even know they were out there. It's an incredibly kind gesture. And while I'm happy to accept money to help pay for the cost of maintaining this site, I don't think a box full of BBQ can be topped. Seriously, thanks again to Jeff for the BBQ. The brisket truly is the best I've ever had (and I still have a good 3 pounds left!), and brisket is the soul of Texas BBQ. So really, you've sent me a little bit of your home. And so far, it's been incredibly tasty. I've always put Memphis and Kansas City ahead of Texas in the BBQ wars, but I may have to rethink that.

I am the lucky recipient of another completely unexpected gift from a reader.
This past weekend was the Memphis in May BBQ Competition, one of the largest such competitions in the world. As some of you may know, I am a BBQ fanatic (and I finally just perfected my babyback ribs, by the way) and I love competitions like this, though I've never participated in one.
It's been a while since I wrote about one of my great passions, BBQ. This weekend I made the best ribs I've ever made with a few minor little experimental adjustments. I tend not to follow the same rules every time, I like to try different things and see how they work out.
I'm off for the rest of the day. I have business to take care of in the afternoon, then I'm off to Lake Idlewild for a jazz festival. An old acquaintance of mine, Vinx, is performing there tonight. He's an absolutely incredible musician and singer.
